Actually, I believe they put sections of large pipe down and connect them (it is possible to weld underwater) and then pump out the water but I'm going to have to look it up because I've always wondered too.

Bright kid to ask such a question.

update: I was right about that being one method except rubber seals are used to make the sections water tight. There are other methods too such as one using compressed air to displace the water but apparently that is hard on workers who have to go through compression and decompression processes. I never would have dreamed of that being one way to do it, sounds very rough indeed.
